Canning and sorts

It's been too long since I last posted, though there never is that much news to share.

I've been doing a lot of canning these past few weeks. I know have 3 pints of blueberry jam, 5 pints of blueberry peach jam, 4 pints peach butter/jam (it didn't turn out like it was suppose to!), 4 pints peach butter, 4 quarts of peaches and 15 quarts of chunky ketchup. Oh, and 5 pints of pepper jelly which I did last night. I have enough peppers to do another batch of pepper jelly, but I want to make sure this taste ok first! It's the first time I've ever made it, and it doesn't look anything like my mother-in-laws, so we will see!  I wanted to get as much canning done as possible before school starts, and I have succeeded. I still want to do another box of ketchup (that 15 quarts came from one box of romas!), but that will be week after next I think. There is still applesauce too, but I won't be able to get that done before school.

Clarence has been battling an eye infection all week. It started out Monday around lunch, he felt like something was in it and he couldn't see out of it very well (mainly because it hurt to open it or let sunlight in), so he came home from work early. As the day progressed it didn't get any better, so we went to his eye doctor the next day and he said he had a bacterial infection in his eye. He gave him some eye drops to put in it and told him to come back the next day for him to check it, so we did. It wasn't as improved as the doctor would have liked, but he said it had improved some so to come back Friday. Clarence asked if he could just call and tell him how it was so we didn't have to make another trip to Hillsville, and he said yes, but come Friday morning he woke up and it was so blurry he couldn't see out of it! So we went back up there. He said he could see white blood cells in his cornia (not sure how to spell that!), and he was going to send him to a specialist in Roanoke. So, we got in the car to head to Roanoke, he got us an appointment for 1:00 that afternoon, and the car wouldn't crank...It's always something!  We ended up having to get his parents to bring the truck to Hillsville and leaving the car at the bank. We got there on time though, and the doctor said he thought it was just irritated and there was nothing wrong with his eye. He gave him some more medicated drops and told him to come back the next day so he could check it, so we went back yesterday and he said it was looking better just to keep putting the drops in it. He can see out of it this morning, so that's good news. :)

Eddie is growing like a little weed! If I can figure out how, I will post some pictures of him. He has recently discovered he can make a high pitch (happy) squeal, so he likes to do that all the time now! He is such an early bird, in a way I wish he would sleep later, but in another way it's good because it gets me up and going early and I seem to be more productive throughout the day. He has been waking up at 5:45 every morning.

While we were in Roanoke yesterday we went to hhgregg and bought a laptop. I had decided not to get one, I would just fix the wireless on the one I have, but then I found out that I had to have Word 2010 for one of my classes. After some research, I was going to have to buy the windows upgrade to get Word 2010, and that was going to be several hundred dollars by the time I got all the programs I needed. So we thought it made more sense to buy the computer...It's a Toshiba, really nice, and was on sale for $499, so it was a good deal. I have financial aide money to pay for it, which was a bonus too! Had it not been for that I would have had to figure something else out....

I can't wait for school to start!! I know I've said that a lot. :) I'm super excited about it! Ashlee and I go to campus on the 18th for Student Day and to buy our books. Other than books, I think I have everything I need.

Well, I think I have rambled on enough, time for breakfast!
